Brewing Rituals

Bold coffee rewards patience. These are the two rituals we keep at Feviba, one from each side of our house. Both start with the same bean: dark-roasted Vietnamese Robusta.

The Phin Vietnam's Slow Drip

The phin is a small metal filter that sits on top of your glass and takes its time. For a standard 4 oz (120 ml) phin:

  1. Grind 18–20 g of Feviba coffee medium-coarse, like coarse sand.
  2. Add the grounds, shake level, and rest the gravity press on top. Snug, never tamped.
  3. Bloom: pour about 30 ml of hot water (92–96°C, just off the boil) and wait 30–40 seconds.
  4. Fill the chamber with another 80–90 ml, cover, and let gravity work. First drops should fall within about a minute; a good cup finishes in 4–5 minutes, yielding roughly 90–100 ml of strong coffee.
  5. Drink it hot, or pour over ice with 1–2 tablespoons of sweetened condensed milk for cà phê sữa đá.

Dripping too fast (under 3 minutes)? Grind finer. Barely dripping? Grind coarser or loosen the press.

The Cafecito Cuba's Sweet Ritual

Cuban coffee culture gave us the moka pot ritual and the espumita, a pale, whipped sugar foam that crowns the cup. For a 3-cup (about 5 oz) moka pot:

  1. Grind 15–18 g of Feviba coffee fine, slightly coarser than a traditional espresso grind, and fill the basket level, without pressing.
  2. Fill the base with hot water to just below the safety valve, assemble, and set over medium heat with the lid open.
  3. While it brews, spoon 2–3 teaspoons of sugar into a small pitcher or cup.
  4. The moment the first dark drops appear, add them to the sugar, a teaspoon or so, and whip hard until it turns into a pale, thick foam. That's the espumita.
  5. Just before the pot begins to sputter aggressively, remove it from the heat, the final sputter adds harshness. Stir the rest of the coffee into the foam and let it rise to the top. Yields 2–3 cafecitos in small cups. Always offer one to whoever is nearby, that part is not optional.

Beyond the Rituals

The rituals are where Feviba coffee feels most at home, but they are not rules. Pull it as espresso, run it through your drip machine, or brew it cold. The bold character comes through in every method, often with an even stronger cup to show for it.

Every kitchen is different. Adjust the grind, the dose, or the sweetness until the cup feels right to you.
